  • 8 oz (225 g) mascarpone cheese, room temperature
  • 3 large eggs, separated (room temperature)
  • 3/4 cup (150 g) granulated sugar
  • 1 tsp pure vanilla extract
  • Pinch of salt
  • 1 1/2 cups (360 ml) strong brewed espresso or very strong coffee, cooled
  • 2 tbsp coffee liqueur (optional)
  • 24 ladyfinger cookies (savoiardi), fresh and crisp
  • Unsweetened cocoa powder, for dusting

Instructions

  1. Brew 1 1/2 cups (360 ml) of strong espresso or coffee, then let it cool to room temperature. Stir in 2 tablespoons of coffee liqueur if using. Set aside.
  2. In a medium bowl, whisk the 3 egg yolks with 3/4 cup (150 g) sugar until thick and pale—about 3-4 minutes with an electric mixer. It should form ribbons when you lift the whisk.
  3. Gently fold the mascarpone cheese into the yolk mixture until smooth and creamy. Avoid overmixing to keep it luscious.
  4. In a clean bowl, add a pinch of salt to the egg whites and whisk until stiff peaks form.
  5. Carefully fold the whipped egg whites into the mascarpone mixture in two batches, maintaining as much air as possible.
  6. Quickly dip each ladyfinger into the coffee soak for about 1-2 seconds—don’t soak too long or they’ll turn mushy! Arrange a single layer of soaked ladyfingers on the bottom of your dish.
  7. Spread half of the mascarpone cream evenly over the ladyfingers.
  8. Add another layer of coffee-dipped ladyfingers, then top with the remaining mascarpone cream.
  9. Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to let flavors meld and the texture set beautifully.
  10. Just before serving, sift a generous layer of unsweetened cocoa powder over the top.

Notes

Use pasteurized eggs or whipped cream as a substitute for raw eggs. Dip ladyfingers quickly to avoid sogginess. Chill overnight for best flavor and texture. Dust cocoa powder just before serving to keep it dry and velvety.
