Creamy Chicken Wild Rice Casserole Recipe – Easy & Perfect Comfort Food

  • Cooked and shredded chicken breast or thighs
  • 1 cup uncooked wild rice
  • Diced onion
  • Diced celery
  • Diced carrots
  • Diced mushrooms
  • 2 tablespoons unsalted butter (for sautéing)
  • 2 tablespoons unsalted butter (for sauce)
  • 3 tablespoons all-purpose flour
  • 2 cups low-sodium chicken broth
  • 1 cup whole milk or half-and-half
  • 1 cup shredded cheddar cheese
  • Garlic powder
  • Salt
  • Black pepper
  • Thyme
  • Parsley
  • Optional: frozen peas, shredded Parmesan cheese, crispy bacon bits

Instructions

  1. Rinse 1 cup of wild rice under cold water. In a medium saucepan, add the rice and 2 cups of water. Bring to a boil, then reduce to a simmer. Cover and cook for 40-50 minutes or until tender. Drain excess water and set aside.
  2. Preheat the oven to 375°F (190°C) and grease a 9×13-inch casserole dish.
  3. In a large skillet, melt 2 tablespoons of butter over medium heat. Add diced onion, celery, carrots, and mushrooms. Cook until softened, about 5-7 minutes. Remove from heat and set aside.
  4. In the same skillet, melt another 2 tablespoons of butter. Stir in 3 tablespoons of all-purpose flour and cook for 1-2 minutes to form a roux. Gradually whisk in 2 cups of chicken broth and 1 cup of milk. Cook until thickened, about 5 minutes. Season with garlic powder, salt, pepper, and thyme. Stir in 1 cup of shredded cheddar cheese until melted.
  5. In a large mixing bowl, combine the cooked wild rice, shredded chicken, sautéed vegetables, and creamy sauce. Mix until everything is evenly coated.
  6. Pour the mixture into the prepared casserole dish. Sprinkle an additional ½ cup of shredded cheddar cheese on top.
  7. Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for another 10 minutes, or until the cheese is bubbly and golden brown.
  8. Remove from the oven and let the casserole cool for about 5 minutes before serving.
