Creamy Cheesy Chicken and Broccoli Quinoa Bake

A comforting casserole made with tender chicken, fresh broccoli, hearty quinoa, and a creamy, cheesy sauce. Perfect for family dinners or casual gatherings.

  • 2 cups cooked, shredded chicken
  • 1 cup uncooked quinoa, rinsed
  • 2 cups fresh broccoli florets, chopped
  • 2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 1/2 cups whole milk or any milk of choice
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 cup low-sodium chicken broth
  • Optional: Chopped parsley or breadcrumbs for topping

Instructions

  1. Rinse 1 cup of quinoa under cold water in a fine mesh strainer. In a medium saucepan, combine the quinoa with 2 cups of water and bring to a boil. Reduce the heat, cover, and simmer for 15 minutes or until all the water is absorbed. Fluff with a fork and set aside.
  2. In a medium saucepan, melt 2 tablespoons of butter over medium heat. Add 2 tablespoons of flour and whisk constantly for 1-2 minutes until it forms a smooth paste. Gradually add 1Β½ cups of milk and 1 cup of chicken broth, whisking continuously to prevent lumps. Stir in 2 cloves of minced garlic, season with salt and pepper, and cook until the sauce thickens (around 5 minutes).
  3. Remove the sauce from heat and stir in 1Β½ cups of shredded cheddar cheese and Β½ cup grated Parmesan cheese until melted and smooth.
  4. Chop 2 cups of broccoli florets into bite-sized pieces. Lightly steam or blanch them for 3-4 minutes to soften slightly. Drain and set aside.
  5. In a large mixing bowl, combine the cooked quinoa, shredded chicken, steamed broccoli, and cheese sauce. Mix until everything is evenly coated.
  6. Preheat your oven to 375Β°F (190Β°C). Grease a 9×13 baking dish and pour the mixture into the dish, spreading it out evenly. Sprinkle the remaining Β½ cup shredded cheddar cheese on top.
  7. Bake the casserole uncovered for 20-25 minutes, or until the cheese is bubbly and golden brown.
  8. Remove from the oven and let it cool for 5 minutes before serving. Garnish with fresh chopped parsley or a sprinkle of breadcrumbs for added texture.
