  • 2 cups whole milk
  • 2 cups sharp cheddar cheese, freshly shredded

Instructions

  1. Chop the broccoli into small florets, dice the onion, and grate the carrots. Mince the garlic and shred the cheddar cheese.
  2. In a large soup pot, melt 4 tablespoons of unsalted butter over medium heat. Add the diced onion and minced garlic, sautΓ©ing for about 3-4 minutes until softened and fragrant.
  3. Sprinkle 1/4 cup of all-purpose flour over the onions and garlic. Stir constantly for 1-2 minutes until the flour is golden and well incorporated.
  4. Gradually pour in 4 cups of vegetable or chicken broth, whisking continuously to avoid lumps. Bring the mixture to a gentle simmer.
  5. Stir in the broccoli florets and grated carrots. Cover and let the soup simmer for about 10-12 minutes, or until the vegetables are tender.
  6. Use an immersion blender to blend the soup until smooth. If you prefer a chunkier texture, blend just half of the soup and leave the rest as is.
  7. Stir in 2 cups of whole milk and slowly add 2 cups of shredded cheddar cheese, one handful at a time. Stir until the cheese is completely melted and the soup is creamy.
  8. Add salt, black pepper, and optional spices like a pinch of nutmeg or cayenne pepper. Stir well and taste to adjust seasoning.
