These easy cranberry brie bites feature creamy brie, tangy cranberry sauce, and buttery puff pastry, baked into perfect bite-sized appetizers. They’re festive, crowd-pleasing, and come together in under 30 minutes—ideal for parties and holiday gatherings.

  • 1 sheet puff pastry (about 8 oz), thawed
  • 8 oz brie cheese, chilled and cut into 1/2-inch cubes
  • 1 cup cranberry sauce (homemade or store-bought)
  • Zest of 1 orange (optional)
  • 1/4 cup chopped pecans or walnuts (optional)
  • 1 tablespoon fresh thyme leaves (optional)
  • 1 large egg, lightly beaten (for egg wash)

Instructions

  1. Thaw puff pastry according to package instructions (about 30-40 minutes at room temperature).
  2. Lightly flour your work surface and roll out the pastry to a 12 x 9 inch rectangle. Cut into 24 even squares.
  3. Lightly spray or butter a 24-cup mini muffin tin. Place one pastry square into each cup, pressing gently to form a base.
  4. Cut chilled brie into 24 small cubes (about 1/2-inch each). Place one cube into each pastry cup.
  5. Spoon about 1 teaspoon of cranberry sauce onto each brie cube. If using homemade, mix in a bit of orange zest.
  6. Sprinkle chopped pecans (or walnuts) and fresh thyme leaves over each bite, if desired.
  7. Brush exposed pastry edges with beaten egg for a golden finish.
  8. Preheat oven to 375°F. Bake for 15-18 minutes, until pastry is puffed and golden and cheese is melty.
  9. Let bites cool in the tin for 5 minutes before removing. Run a butter knife gently around each bite if they stick.
  10. Serve warm and enjoy!

Notes

Keep puff pastry and brie cold for best results. Don’t overfill cups to prevent overflow. You can prep ahead and bake just before serving. For gluten-free or vegan adaptations, use specialty puff pastry and cheese. Nuts and herbs are optional for added crunch and flavor.
