A quick and easy cinnamon roll casserole that combines canned cinnamon rolls soaked in a buttery custard and topped with a creamy, tangy cream cheese icing. Perfect for cozy weekends or brunch with minimal effort.

Ingredients

Scale
  • 1 can (about 12 ounces) canned cinnamon rolls (e.g., Pillsbury)
  • 2 large eggs, room temperature
  • 1 cup (240 ml) whole milk or cream
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • Pinch of nutmeg (optional)
  • 4 ounces (113 grams) cream cheese, softened
  • 1 cup (120 grams) powdered sugar
  • 12 tablespoons milk or cream (for icing)
  • Pinch of salt (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your baking dish lightly with butter or non-stick spray.
  2. Arrange the canned cinnamon rolls side by side in a single layer in the baking dish, leaving a little space for expansion.
  3. In a medium bowl, whisk together 2 large eggs, 1 cup whole milk or cream, 2 tablespoons melted butter, 1 teaspoon vanilla extract, 1 teaspoon ground cinnamon, and a pinch of nutmeg if using until smooth.
  4. Pour the custard evenly over the cinnamon rolls and let soak for about 5 minutes.
  5. Bake for 25-30 minutes until the casserole puffs slightly and turns light golden brown. Tent with foil if the top browns too quickly.
  6. While baking, prepare the cream cheese icing by beating 4 ounces softened cream cheese with 1 cup powdered sugar and 1-2 tablespoons milk or cream until smooth and creamy.
  7. Remove the casserole from the oven and let it cool for 5 minutes.
  8. Drizzle the cream cheese icing evenly over the warm casserole using an offset knife or spoon.
  9. Serve warm. Leftovers can be reheated in the microwave or oven.

Notes

Use room-temperature eggs for a smooth custard. Let cinnamon rolls soak in custard for 5 minutes before baking to keep them tender. If the top browns too fast, tent with foil. Soften cream cheese before making icing to avoid lumps. Leftovers reheat well in microwave or oven. Variations include adding fruit, nuts, or using dairy-free and gluten-free alternatives.
