Ingredients

Scale
  • 2 cups cooked, shredded chicken
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/3 cup all-purpose flour
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 medium onion, diced
  • 3 tablespoons unsalted butter
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 3/4 cup buttermilk (or substitute with milk and 1 tablespoon lemon juice)
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat the oven to 400Β°F (200Β°C). Grease a 9×13-inch baking dish or cast-iron skillet lightly with butter or cooking spray.
  2. In a large skillet, melt the butter over medium heat. Add the diced onion and cook until soft and translucent, about 3-4 minutes. Stir in the garlic powder and dried thyme.
  3. Sprinkle the flour over the onions and stir to coat. Cook for 1-2 minutes to remove the raw taste from the flour. Slowly whisk in the chicken broth and heavy cream, ensuring no lumps form. Cook until the mixture thickens, about 5-7 minutes.
  4. Stir in the shredded chicken and frozen mixed vegetables. Season with salt and pepper to taste. Remove from heat and transfer the filling into your prepared baking dish.
  5. In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Cut the cold butter into the flour mixture using a pastry blender or two knives until it resembles coarse crumbs. Stir in the buttermilk and shredded cheddar (if using) until just combined.
  6. Drop the biscuit dough by spoonfuls over the chicken mixture, covering the filling as evenly as possible.
  7. Place the dish in the preheated oven and bake for 25-30 minutes, or until the biscuits are golden brown and the filling is bubbling.
  8. Remove the cobbler from the oven and let it cool for 5-10 minutes before serving.
