Cheesy Swiss Mushroom Melt Sandwich

A comforting yet classy sandwich featuring gooey Swiss cheese, sautéed mushrooms, and crispy sourdough bread, perfect for lunch or dinner.

Ingredients

  • 2 slices sourdough bread
  • 2 slices Swiss cheese
  • 1 cup mushrooms, sliced (baby bella or button mushrooms)
  • 2 tablespoons butter, divided
  • 1 clove garlic, minced
  • Salt and pepper, to taste
  • Fresh thyme (optional)

Instructions

  1. Heat 1 tablespoon of butter in a skillet over medium heat. Add sliced mushrooms and cook for 3-4 minutes, stirring occasionally.
  2. Add minced garlic to the skillet and season with salt and pepper. Stir well and cook for another 2-3 minutes until mushrooms are golden brown and slightly caramelized. Add fresh thyme if desired. Remove mushrooms from skillet and set aside.
  3. Butter one side of each slice of sourdough bread evenly.
  4. Place one slice of bread, buttered side down, onto the skillet. Layer one slice of Swiss cheese, followed by sautéed mushrooms, then the second slice of Swiss cheese. Top with the second slice of bread, buttered side up.
  5. Cook the sandwich over medium heat for 2-3 minutes, or until the bottom slice is golden brown and crispy. Flip the sandwich carefully using a spatula.
  6. Cook the other side for another 2-3 minutes, pressing gently with the spatula to help the cheese melt and the bread crisp up.
  7. Remove the sandwich from the skillet once both sides are golden and the cheese is melted. Let cool for a minute or two, slice in half, and serve warm.

Notes

For extra flavor, add caramelized onions or sprinkle crushed red pepper flakes. Use Gruyère or Havarti cheese as alternatives to Swiss. Keep the heat medium to avoid burning the bread.
