Tender, lightly caramelized carrots coated in a glossy brown sugar glaze with a hint of fresh thyme. Perfect for holidays or weeknight dinners.

Ingredients

Scale
  • 1 pound fresh medium-sized carrots, peeled and sliced into ½ inch thick pieces
  • 2 tablespoons unsalted butter
  • 2 tablespoons light brown sugar
  • 2 tablespoons water
  • 1 teaspoon fresh thyme leaves
  • Salt to taste
  • Pepper to taste

Instructions

  1. Peel the carrots and slice them into evenly sized pieces, about ½ inch thick.
  2. Heat a large skillet over medium heat and add 2 tablespoons of unsalted butter. Let the butter melt completely and bubble slightly.
  3. Add the sliced carrots to the skillet and sauté for about 2 minutes, stirring occasionally.
  4. Sprinkle 2 tablespoons of brown sugar evenly over the carrots and stir to coat them in the sugar and butter mixture.
  5. Pour in 2 tablespoons of water and cover the skillet with a lid. Reduce the heat to medium-low and let the carrots steam for 8-10 minutes, stirring occasionally.
  6. Remove the lid and check the carrots for tenderness. If needed, cover and cook for another 2-3 minutes.
  7. Once the carrots are tender, remove the lid and let the liquid reduce slightly, about 2-3 minutes, stirring occasionally.
  8. Sprinkle 1 teaspoon of fresh thyme leaves over the carrots and season with salt and pepper to taste. Stir well to combine.
  9. Transfer the glazed carrots to a serving dish and garnish with an extra sprinkle of thyme.

Notes

Slice carrots evenly for consistent cooking. Let the sugar and butter caramelize slowly for the best flavor. Adjust seasoning to taste and garnish with fresh thyme for extra flavor.
